This coffee comes from “Setame”, a farm sitting atop a high ridge in Sidamo, Ethiopia. At an altitude of 2,300 MASL this farm is set to produce exceptional coffees. Setame is operated by Nguisse Nare, alongside a team of knowledgeable producers with a strict focus on quality and transparency. Growing purely the 74158 varietal, a common Ethiopian heirloom, the farm is also intercropped with taro and sweet potato plants.

Instructions:
- Dose the coffee and start the timer. Pour 55g of water to bloom for 45 seconds.
- At 45 seconds, pour 110g of water, bringing the total brew weight to 165g.
- Pour in a spiral pattern, finishing in the center.
- At 1:25, begin the final pour, bringing the total weight to 270g.
- The brew should finish between 2:30-3:00 minutes.
