This coffee was produced by CATUR Coffee, a collaborative effort to improve the coffee production across Indonesia. As a part of this, they are using different strains of yeast inoculated fermentations to derive flavour in the cup, the coffee we are showcasing today is in the Bumi category.
“BUMI means earth in Bahasa Indonesia, the official language of the country. It is our take on a classic Indonesian profile. The coffees under BUMI taste profile have the same chocolatey, brown spices and sweetness that people like about Indonesian coffee but elevated with extra vibrancy and structure. This year, we utilized a combination of full washed and honey methods as well as yeast-based inoculations.”
This coffee comes from the island of Bali in Indonesia and is processed by a local group called Karana Global. Karana Global assists local farmers by processing their coffees with high quality and innovative techniques, resulting in higher cup scores and therefore more profit for the farmers. Throughout the process, Karana Global is training and employing locals, as well as contributing to projects centered on community education and environmental impact. Through the various coffees they have processed, they have directly impacted 135 families in the local area.
This specific coffee was inoculated with specific yeasts before being left to ferment in open air tanks for 62 hours.
Kartika Variety (which translates to “Catuai arabica coffee”) is a local mutation of the Catuai variety. This variety is prized for its high cup quality although it is prone to pests and diseases, requiring much attention.
We find this coffee to be well balanced, with a high sweetness and mellowed acidity, giving us flavours of sweet fruit, florals, and a soft, caramel-like finish.
