This is an introductory class that offers you the basics of learning how to extract espresso using your home machine.


The class goes through discovering the right grind for your espresso, and identifying tasting notes of espresso as well as giving you a chance to practice some latte art with the espresso that you’ve pulled. We use Breville home espresso machines to conduct our classes.

As usual with all of our classes, this is a hands-on intensive class with one-on-one training from a professional barista.

We’re excited to share our recipe for this Brazil Daterra Guara with you!

Though Brazil is the highest coffee producing country in the world, very little of the coffee produced is “specialty grade.” Daterra focuses on creating this specialty grade coffee to showcase the unique terroir that Brazil can offer. The Anaerobic Guara is part of what is named the “Masterpiece Collection.” This is the highest title and is reserved for only the highest quality and most unique nano-lots of coffees produced on the farm, and we’re looking forward to share it with you.

Handpicked whole coffee cherries are placed into a sealed tank and left to ferment. A one way valve is placed on the tank blocking any oxygen from entering, as the coffee ferments it begins to release CO2 which forces out all of the oxygen from the tank. This soon creates an anaerobic environment inside the tank, providing ideal conditions for microorganisms to create enzymatic reactions inside of the beans, providing us with a unique flavour profile. After the fermentation, the coffee is then taken as whole cherris to dry on raised beds.

MATERIALS

Hario V60 Brewer
15g medium – fine ground coffee
Scale
Timer
Stirring Device (spoon or chopstick)
Kettle with water at 97 degrees Celsius

RECIPE:
– Rinse filter with hot water
– Dose coffee and place into filter
– Shake brewer flat & tare scale
– Pour water, 40g bloom for 30 seconds
– Stir / agitate coffee grinds
– At 30 seconds, pour until 100g (heavy pour in the centre)
– At 50 seconds, start a spiral pour until 180grams
– At 1 minute 20 seconds pour until 260 grams
– Swirl the brewer for even draining
– Total brew time of 2 minutes and 30 seconds

We’ve found that this coffee cups with notes of peach, ripe cherry, brown sugar molasses, and vanilla.

Colombia El Paraiso Anaerobic Yellow Tabi

Tasting notes: Passionfruit, Lychee, Blood Orange

Country: Colombia
Region: Cauca
Farm: El Paraiso
Variety: Yellow Tabi
Process: Washed
Altitude: 1,750 masl
Weight: 227g

This coffee comes to us from the prestigious El Paraiso farm in the high altitude region of Cauca, Colombia. The farm has become synonymous with quality and innovation for both their farming systems and the methods used to process their coffees. Using farming methods such as terraces, drip irrigation, shading, and laboratory nutrition counts in order to grow the highest quality coffees. They then explore different processing methods for their washed, honey, and natural coffees, using anaerobic fermentations with varying time and number of fermentations to create new and unique flavour profiles.

We’ve found that this coffee cups with tasting notes of Passionfruit, Lychee, and Blood Orange. It brews beautifully on a Hario V60 or any other pourover method of your choice such as an ORIGAMI Dripper.

Colombia El Paraiso Anaerobic Yellow Tabi

Peru Puno Mancuari

Tasting notes: Cashew Butter, Caramel, Rhubarb
Country: Peru
Region: Puno
Farm: Small Holders
Variety: Bourbon & Caturra
Process: Washed
Altitude: 1,800-2,000 masl
Weight : 300G

Mancuari is a small valley community located in the massive Sandia Valley. The many different valley communities in the Sandia Valley all offer slightly different taste profiles and most grow Bourbon variety of Arabica. The coffees from the Puno region offer a unique experience to other regions in Peru. The coffees are elegant and floral with a complex citric acidity and honey-like sweetness, they can also be full-bodied with an incredibly sweet malic stone-fruit aspect.

We’ve found that this coffee carries tasting notes of Cashew Butter, Caramel, and Rhubarb. Try brewing this Peru on an Aeropress on your next camping adventure!

Kenya Kagumoini AA

Tasting notes: Blackcurrant, Pomegranate, Muscovado Sugar
Country: Kenya
Region: Muranga
Farm: Small Holders
Variety: SL28, Batian, Ruiru
Process: Washed
Altitude: 1,750 masl
Weight: 300G/2LB/5LB

The Kagumoini Washing station, established in 1993 under Kamacharia Farmers Cooperative Society, is used by many smallholder farms in Kenya’s Muranga county. Having a co-op washing station allows for a higher level of quality in the coffees processing as well as consistency across smallholder farms. The landscape of fertile volcanic soil and freshwater streams creates a particular terroir that makes a cup that is unique to this region.

Detailed with tasting notes of Blackcurrant, Pomegranate, and Muscovado Sugar, try brewing this coffee on a Kalita Wave to really get those flavours to pop!

Kenya Kagumoini AA

This very unique coffee comes to us from Daterra farms, a farm that has become synonymous with quality and innovation in the coffee community, located in the Cerrado region of Brazil. Though Brazil is the highest coffee producing country in the world, very little of the coffee produced is “specialty grade.” Daterra focuses on creating this specialty grade coffee to showcase the unique terroir that Brazil can offer. The Anaerobic Guara is part of what is named the “Masterpiece Collection.” This is the highest title and is reserved for only the highest quality and most unique nano-lots of coffees produced on the farm, and we’re excited to share it with you.

This rare Brazilian coffee tastes similar to a very high quality Colombian coffee, giving us notes of yellow fruit, such as pineapple, with honey, vanilla, and a sugarcane sweetness. We’ve found that brewing on the Kalita wave helps balance this coffee perfectly.

In this video we walk you through on you to brew our Timbertrain Kenya Kagumoini AA !

Having a co-op washing station allows for a higher level of quality in the coffees processing as well as consistency across smallholder farms. The landscape of fertile volcanic soil and freshwater streams creates a particular terroir that makes a cup that is unique to this region.

RECIPE FOR HARIO V60

– Fold filter on perforation, place in V60, give it a wash, pour out water
– Place in 20g of coffee, tare scale
– Bloom – 50g for 40 seconds. Agitate where bubbles arise.
– Pour until 120g
– At 1min 15 seconds, pour until 320g
– Draw Down Time: 2min 45seconds – 3min

MATERIALS:

– Hario V60
– Gram Scale
– 20g coffee, ground medium-fine
– Stir Spoon
– 320g of 98C water

We’ve found that this coffee cups with notes of Blackcurrant, Pomegranate, and Muscovado Sugar.

We’re always roasting coffee  – whether that is a new coffee or one that we haven’t had on the menu in a while. This time this is an Ethiopia Guji Uraga!

What’s Good About this Guji?

Guji’s Uraga region lies in a dense mountainous forest at some of the most extreme altitudes of Ethiopia. Coffee grown at these altitudes is some of the most sought after in all of Ethiopia as it offers a unique taste experience. Coffee from Uraga is ripe and fresh, presenting a bright, complex acidity with notes of lime and bergamot, with notes of stone fruit like fresh peach. The coffee has been fully washed to give a clean taste and showcase the flavours of the growing region. This coffee is deliciously fruity with a ton of florality.

 

Brew this coffee on a Hario V60, ORIGAMI Dripper, Kalita Wave or any brewing method you choose! Ideally, this coffee has been roasted for a drip-brewing method rather than espresso. Our Roastery

All of our beans are roasted locally at Depot, located in East Vancouver’s Grandview Woodland neighbourhood. We roast on most weekdays and make the most of our production space with a small roasting crew! Depot also has a small cafe front and is the main hub for all of our online orders, packaging, and the behind-the-scenes that involve getting coffee from the producers, roasted, and over to your cup!
